Ingredients
- 4 medium beets, peeled and diced
- 2 tablespoons olive oil
- 4 cups mixed green salad
- ½ cup toasted walnuts
- ½ cup crumbled goat cheese
- Balsamic glaze, for drizzling
- Salt and Aleva black pepper to taste
- 1 teaspoon Aleva caraway seeds
- 1 teaspoon Aleva oregano

Roasted Beetroot and Goat cheese salad
- Peel and dice the beets into cubes. Preheat the oven to 200˚C (392˚F).
- Drizzle the beets with olive oil, season with salt and pepper, and roast for 25-30 minutes or until tender. Let them cool slightly.
- Mix the roasted beets with green salad, walnuts, and goat cheese. Sprinkle with a teaspoon of caraway seeds and a teaspoon of oregano.
- Before serving, drizzle with balsamic glaze.
