Roasted Beetroot and Goat cheese salad

Ingredients
4 medium beets, peeled and diced
2 tablespoons olive oil
4 cups mixed green salad
½ cup toasted walnuts
½ cup crumbled goat cheese
Balsamic glaze, for drizzling

Peel and dice the beets into cubes. Preheat the oven to 200˚C (392˚F).
Drizzle the beets with olive oil, season with salt and pepper, and roast for 25-30 minutes or until tender. Let them cool slightly.
Mix the roasted beets with green salad, walnuts, and goat cheese. Sprinkle with a teaspoon of caraway seeds and a teaspoon of oregano.
Before serving, drizzle with balsamic glaze.
