  • Peel and dice the beets into cubes. Preheat the oven to 200˚C (392˚F).

  • Drizzle the beets with olive oil, season with salt and pepper, and roast for 25-30 minutes or until tender. Let them cool slightly.

  • Mix the roasted beets with green salad, walnuts, and goat cheese. Sprinkle with a teaspoon of caraway seeds and a teaspoon of oregano.

  • Before serving, drizzle with balsamic glaze.
